In the "Bar à Vin", in addition to the Aosta Valley food tradition, the aim is to recover the old “poor” recipes that represent the true and genuine local tastes: from tripe to cotechino, from gnocchi to tagliatelle, reinterpreting the teachings to give even more personality to the dishes. Local cuisine reigns supreme on the menu, with its scents of game, fish from the torrent, black bread baked in village ovens, local cold cuts and cheeses, polenta, Valpellinentze soup.
